Potato Wedges - These are crusty and oven baked wedges. In this the potato wedges are first tossed with lots of herbs and spices with some olive oil in it and then they are baked into the oven until tender. These are perfect as an appetizer with some dip on the side or even as a side dish with any kinds of meals or soups.

Ingredients
--------------------
4-6 Long Potatoes
salt to taste
3 Tbsp olive oil
1/2 Tsp black pepper powder
1/2 Tsp red chilly flakes
1/2 Tsp oregano
1/2 Tsp thyme
1/2 Tsp rosemary
2 Tsp ginger garlic crushed/paste
1 Tsp fresh parsley
1 Tsp onion powder
1/4 Cup dry parmesan cheese

Preparation
--------------------

1. Pre heat the oven at 200 degree Celsius for around ten minutes. cut each potato into half length wise and then cut each half into four equal sized wedges.

2. Now pat-dry all the potato wedges with the kitchen towel or a napkin and keep it aside.

3. Next, in a bowl stir in the olive oil along with some black pepper,red chilly flake, oregano, thyme, rose merry, ginger garlic crushed, fresh parsley and
onion powder and mix everything well to make a good marinate out of it.

4. Put in the potato wedges into this marinate along with very little salt and give everything a good mix until all the potatoes are properly coated with the herbs and the marinate.

5. Lastly mix in the dry Parmesan cheese and again mix everything well. Now these are nicely coated and ready to go in the oven.

6. Now place the potato wedges evenly on the baking sheet lined with the foil. Be sure to space them out a bit so that they are cooked uniformly.

7. Now I am going to put this into the oven and bake for around twenty to twenty five minutes at 180 degrees Celsius or until they are tender.

8. I am going to serve them hot with the mayo dip. So my flavorful and oven baked potato wedges are ready.
