Crispy Parmesan Potato Wedges another super easy and super delicious dish for you today!

CRISPY PARMESAN POTATO WEDGES

Ingredients

¼ cup parmesan cheese powder
2 large potatoes
¼ cup refined flour
Crushed black peppercorns to taste
Salt to taste
1½ teaspoons red chilli flakes
Oil for deep-frying
1 teaspoon chopped fresh parsley

Method

1. Halve the potatoes and cut into wedges.
2. Heat some water in a small deep non-stick pan and bring to a boil. Add potato wedges, cover and par boil. Strain in a bowl.
3. Combine flour, crushed peppercorns, salt and 1 teaspoon chilli flakes in another bowl and mix well. Add it to par boiled potatoes and toss to mix. Transfer potato wedges in a zip lock bag, seal and freeze for 4-6 hours. Remove from freezer and separate the wedges.
4. Heat sufficient oil in a pan.
5. Combine parmesan cheese, remaining chilli flakes and chopped parsley in another bowl and mix well.
6. Deep-fry potato wedges in hot oil till golden and crisp. Drain on absorbent paper and sprinkle some cheese mixture on top.
7. Serve hot.
