Crispy, spicy and sweet, this recipe is full of flavours and can make for the perfect appetizer.

CRISPY HONEY CHILLI POTATOES

Ingredients

2 tsps honey
20-25 baby potatoes, par-boiled and unpeeled
Olive oil for spraying
Crushed black peppercorns to taste
Salt to taste
1½ tbsps oil
1 tbsp finely chopped ginger
1 tbsp finely chopped garlic
2 spring onions, chopped with the greens + for garnish
1½ tbsps red chilli sauce
1 tsp red chilli flakes
A pinch of sugar

Method

1. Preheat the oven at 180ºC.
2. Crush each of the potatoes between your palms and arrange them on a baking tray. Spray some olive oil. Sprinkle crushed black peppercorns and salt. Place it in the preheated oven for 15-20 minutes or till the potatoes are crispy.
3. Remove the baking tray out of the oven.
4. Heat oil in a non-stick pan, add ginger, garlic, and spring onion bulbs and sauté for 1-2 minutes.
5. Add red chilli sauce and mix well. Add red chilli flakes, salt, sugar and spring onion greens and mix well.
6. Add honey and mix. Add the roasted potatoes and mix till well combined. Add spring onion greens and mix.
7. Serve hot garnished with spring onion greens.
