Crispy Fried Chicken Recipe | Apna Fried Chicken | How To Make Fried Chicken | Atima's Kitchen

AFC means “Apna Fried Chicken” which is crispy outside and juicy inside. So you can prepare fried chicken without flaws.

Ingredient list:

1250 grams - Chicken

For Marination:

2 Cups - Water (400 ml)
2 tbsp. - Salt
½ Cup - Vinegar
10-12 - Garlic (Crushed)
200 ml - Buttermilk
1 tbsp. - Red Chilli Powder.

For Coating:

1/3 Cup - Corn Flour.
1 Cup - Refined Flour
1 tsp. - Oregano
½ tsp. - Salt
1 tsp. - Black pepper (Crushed)
2 tbsp. - Bread Crumbs
2 - Eggs
Oil for Frying

Wash and towel dry all pieces of chicken. Make half slits in every pieces.

Heat 2 cups of water, add 2 tbsp. salt in it. Heat water till salt dissolves. Add half cup vinegar (any) remove from heat and cool.
Crush 8-10 cloves of garlic.

Take a big bowl and pour 200 ml. buttermilk in it. Add crushed garlic and vinegar solution in it. Add 1 tsp. red chili powder (as per taste)

Dip all chicken pieces in buttermilk mixture. Cover and keep in fridge for 24 hours. (6-8 hours to the least)

Afterwards, prepare a dry mixture for coating. Take 2 tbsp. corn flour, 6 tbsp. refined flour and 3 tbsp. of bread crumbs. Add little salt, 1 tsp. crushed black pepper and 1 tsp. oregano. Mix all dry ingredients properly. Take out all the chicken pieces on a plate. Add 2 eggs in butter milk solution. Coat chicken pieces once in dry mixture, dip once in buttermilk and roll again in dry mixture. Coat properly. Keep aside. TIP: keeping coated pieces aside helps the dry mixture to stick to chicken, so as it does not separate in the oil while frying. Prepare all the pieces like wise.

Now, heat oil in a deep pan for deep frying. Once the oil is hot enough, add 3-4 pieces at a time and deep fry on low to medium heat. Fry from one side for 8 minutes and then flip to other side and fry for 8 minutes again. TIP: Do not flip again and again. When both sides are crispy fried, remove from oil and transfer on paper towel to remove the excess oil. Fry all pieces like wise.

Serve hot with green chutney and sauce.
