Creamy Spinach Pasta | Cooksmart | Sanjeev Kapoor Khazana

Italy is known for its delectable food and one of the most popular Italian Dishes is Pasta. Spinach adds an unique and nutritious twist to this dish.

CREAMY SPINACH PASTA

Ingredients

200 gms spaghetti pasta, boiled
2 tbsps fresh cream
1 medium bunch fresh spinach leaves, blanched
4 tbsps extra virgin olive oil
1 tbsp chopped garlic
1 large onion, finely chopped
10-12 fresh basil leaves
Salt to taste
¼ tsp freshly crushed black peppercorns
1 tbsp grated parmesan cheese
A few thin strips of red capsicum

Method

1. Heat 2 tbsps extra virgin olive oil in a non-stick wok, add onion and saute.
2. Chop the spinach leaves in a chopper.
3. When onion softens, add pasta, spinach, ½ cup water and mix well.
4. Tear basil leaves and add along with salt, freshly crushed black peppercorns and fresh cream and mix well.
5. Add parmesan cheese and mix. Transfer into a serving bowl. Drizzle 2 tbsps extra virgin olive oil, garnish with thin strips of red capsicum and serve hot.
