Creamy Garlic Butter Prawns | Sanjeev Kapoor Khazana

Prawns cooked in creamy butter garlic flavoured sauce with fresh spinach leaves and sundried tomatoes.

CREAMY GARLIC BUTTER PRAWNS

Ingredients

12-16 medium prawns, peeled and deveined with tails intact
1 tablespoon finely chopped garlic
1 tablespoon butter
12-16 fresh spinach leaves
1 large white onion, finely chopped
½ cup milk
2 medium sun-dried tomatoes, cut into strips
1½ teaspoons dried Italian herbs
½ cup white wine
1 tablespoon cornflour
¾ cup grated Parmesan cheese
1 teaspoon chopped fresh parsley + for garnishing

Method

1. Heat butter in a non-stick pan. Add garlic and sauté till fragrant. Add spinach leaves, mix and cook till the leaves wilt.
2. Add onion, mix and sauté till translucent. Add prawns, mix and cook for 1-2 minutes.
3. Add milk, tomatoes and Italian herbs, mix well and simmer for 1-2 minutes or till the sauce thickens.
4. Add white wine, cornflour and cheese, mix well and cook till the prawns are fully done. Add parsley and mix well.
5. Garnish with parsley and serve hot with spaghetti.
