Creamy Bhalla Recipe
Ingredients for bhallay:
Skinless black lentil 3/4 cup
Yellow lentil 1/4 cup
Salt 1 tsp
Water 150ml
Almonds (chopped) 1/2 cup
Raisins 1/4 cup
Ingredients for Imli Chutney:
Tamarind pulp 2 cups
Brown sugar 1 cup
Salt 1 tsp
Red chili powder 1 tsp
Cumin powder 1 tsp
Vinegar 1 tbsp
Ingredients for dahi:
Milk 1 cup
Water 1/2 cup
Yogurt 500g (Yogurt should not be sour)
Cream 200ml
Salt 1 tsp
Sugar 1 tbsp
As required Chaat masala
Water or milk 1/2 cup

Directions:
In two different bowls soak both lentils separately overnight.
In a grinder add soaked black lentil, yellow lentil, salt and grind into a smooth paste. Add water if required. Make sure your paste is not runny.
Then in this lentil mixture add almonds, raisins and mix well. Your bhala mixture is ready.
For tamarind sauce in a pan add tamarind pulp, sugar, salt and red chili powder and cook for 5 to 6 minutes on medium flame.
Lastly add cumin powder, vinegar and give it a good mix. Your imli chutney is ready.
Note: don’t overcook your chutney and add water only to adjust the consistency.
For bhalla making heat oil in a pan; add small balls of daal mixture in oil using a spoon and fry until it becomes golden brown from both sides on medium flame.
In a bowl mix water along with milk. Dip fried bhalay in this mixture for 5 to 6 minutes or until soft. Then remove them from milk and gently press them in your palms to drain excess milk.
Take a separate bowl add cream, salt, sugar, yogurt, milk and mix it all well.
Note: make sure yogurt is not sour and add milk according to your desired consistency.
Place dahi bhallay in a platter pour yogurt and imli sauce on top.
Then sprinkle chaat masala, chopped almonds, raisins on it and garnish with fresh mint.
Your tasty creamy dahi bhllay are ready to serve.
