CREAMY AVOCADO SPAGHETTIIngredients1 ripe avocado2 cups boiled spaghetti8-10 garlic cloves2 tbsps pine nuts10-12 fresh basil sprigs + for garnish3 tbsps extra virgin olive oilCrushed black peppercorns to tasteSalt to taste½ lemon¼ fresh cream1 tbsp finely chopped garlic5-6 cherry tomatoes, halvedParmesan cheese powder for garnishMethod1. Halve the avocado and discard the seed. Scoop out the flesh.2. Put garlic cloves in a blender; add pine nuts, basil sprigs, 2 tbsps olive oil and avocado flesh. Add crushed black peppercorns, salt, squeeze the juice of lemon and add cream and blend till a smooth paste. 3. Heat remaining olive oil in a non-stick pan, add garlic and sauté for a minute. 4. Add spaghetti and cherry tomatoes and toss well. Add salt and crushed black peppercorns and mix well.5. Add the blended paste and toss till well combined. 6. Serve hot garnished with parmesan cheese powder and basil sprig.
