CREAMY AVOCADO SPAGHETTI

Ingredients

1 ripe avocado
2 cups boiled spaghetti
8-10 garlic cloves
2 tbsps pine nuts
10-12 fresh basil sprigs + for garnish
3 tbsps extra virgin olive oil
Crushed black peppercorns to taste
Salt to taste
½ lemon
¼ fresh cream
1 tbsp finely chopped garlic
5-6 cherry tomatoes, halved
Parmesan cheese powder for garnish

Method

1. Halve the avocado and discard the seed. Scoop out the flesh.
2. Put garlic cloves in a blender; add pine nuts, basil sprigs, 2 tbsps olive oil and avocado flesh. Add crushed black peppercorns, salt, squeeze the juice of lemon and add cream and blend till a smooth paste.
3. Heat remaining olive oil in a non-stick pan, add garlic and sauté for a minute.
4. Add spaghetti and cherry tomatoes and toss well. Add salt and crushed black peppercorns and mix well.
5. Add the blended paste and toss till well combined.
6. Serve hot garnished with parmesan cheese powder and basil sprig.
