Cream Cheese Shortcake
Servings: For a 15cm tart mold

INGREDIENTS
120g Butter
100g Sugar
2 Eggs
120g Flour
1 teaspoon Baking powder
180ml Heavy cream
40g Cream cheese
10g Sugar
6 Strawberries
A 20g Apricot jam
A 3/4 teaspoon Water

PREPARATION
1. Mix the room temperature butter with a spatula until it becomes creamy, add sugar and eggs in that order, and mix well each time.

2. Sift in the flour and baking powder and mix thoroughly.

3. Pour the dough into the tart mold lined with parchment paper and bake at 170C for 30-40 minutes.

4. Remove from the oven and let it cool. Once it has cooled down, remove from the mold.

5. Place the cream cheese in a bowl and mix with a hand mixer until smooth, add heavy cream and sugar, and mix until stiff peaks form.

6. Place (5) on top of the chilled cake and smooth the surface.

7. Top with the strawberries, mix A and apply to the strawberries to complete.

8. Enjoy!
