Cranberry Cream Cheese Bars | Sanjeev Kapoor Khazana

Delicious cream cheese bars with the goodness of dried cranberries.

CRANBERRY CREAM CHEESE BARS

Ingredients

¼ cup dried cranberries
2 cups cream cheese
400 grams dough
Refined flour (maida) for dusting
½ cup powdered sugar
1 egg
1 teaspoon vanilla essence
Butter as required
1 cup castor sugar
1 tablespoon cinnamon powder
¼ cup almond flakes
Caramel sauce for drizzling

Method

1. Preheat oven to 180° C.
2. Dust the worktop with some flour, place the dough, knock back to release excess air and roll out into large ½ cm thick sheet.
3. Trim the edges of the sheet to shape into a square sheet and halve.
4. Combine cream cheese and powdered sugar in a bowl and whisk. Add egg and vanilla essence and whisk well into a smooth batter.
5. Grease a rectangle glass baking tray with some butter.
6. Mix together castor sugar and cinnamon powder in a bowl, sprinkle over the greased dish and place one halved sheet.
7. Sprinkle some cinnamon-sugar over the sheet, pour the batter on top and spread evenly. Sprinkle dried cranberries and almond flakes on top and cover with another halved sheet.
8. Brush some butter and again sprinkle some cinnamon-sugar on top.
9. Put the tray into the preheated oven and bake for 10-15 minutes. Remove from oven and slightly cool.
10. Cut into 2 inch squares and put on a serving plate. Drizzle some caramel sauce on top and serve.
