Millet Cranberry Cashew Pulao

Mighty Millets Series - Ep 3

Flavourful, aromatic & delicious pulao made with Foxtail millets a healthy option for lunch/dinner.
I have added cashews, paneer, veggies and berries which give an amazing taste, makes it more flavourful and nutritious.

Foxtail Millet is rich in Vitamin B12 which is essential for maintaining a healthy heart, smooth functioning of the nervous system, and in general good for skin and hair growth. A diet including Foxtail Millet may improve glycemic control and reduce insulin, cholesterol and fasting glucose in Type-2 diabetes patients


Ingredients :
Foxtail millet - 1/2 cup (wash & soak for 4 hrs)
Ghee - 1 tbsp
Cashewnuts -1/4th cup

Paneer - 200 gms
Red chiili powder - 1 tsp
Salt to taste
Garam masala - 1/2 tsp

Ghee - 1 tbsp
Cumin seeds - 1 tsp
Green chillies - 1 tsp
Ginger - 2 tsp
Onion - 1 chopped
Colourful Bell peppers - 1/4th cup each
Turmeric powder - 1/2 tsp
Red chilli powder - 1 tsp
Garam masala - 1 tsp
Salt to taste
Soaked Millet
Water - 1 cup
Cranberries - 1/4th cup
