Crab Loaded Garden Egg Stew

PREP TIME: 10 MINUTES
COOK TIME: 25 MINUTES
SERVES: 4-6

INGREDIENTS
12 medium garden eggs
5 medium tomatoes, chopped.
1 medium onion, diced.
4 cloves of garlic, minced.
Cow hide (wele), cut into pieces
100g smoked tuna
100g baby crabs
1 stinky fish (momoni)
3 tbsp vegetable oil
1 tbsp Salt

DIRECTION
Heat vegetable oil over medium heat, add momone , onion, stir and let fry for a minute.
Add tomatoes, scotch bonnet pepper, stir and let simmer for 3 minutes then add garlic and let simmer.
Add cow hide(wele) , stir, let it cook for 5mins then add smoked tuna.
Add cleaned baby crabs, stir, cover and let simmer for another 5 minutes.
Add diced garden eggs, stir, cover and let it cook for 5 minutes.
Add and adjust salt to your taste.
Crab loaded garden egg stew ready.
