Crab Chilli Tost | Sanjeev Kapoor Khazana

Toasted bread roundels topped with creamy crab meat mixture and cheese.

CRAB CHILLI TOAST

Ingredients

1 cup crab meat
1 bird’s eye chilli
6-8 white bread slices
Oil for drizzling
1 medium onion, finely chopped
½ cup finely chopped spring onion greens
1 tablespoon red chilli sauce
1 tablespoon mayonnaise
1 tablespoon lemon juice
Salt to taste
Grated mozzarella cheese for topping

Method

1. Preheat oven at 180ºC.
2. Cut roundels from bread slices using medium size cookie cutter. Place the bread roundels on a baking tray and drizzle some oil on top. Put the tray in preheated oven and bake for 2-3 minutes. Remove from heat, transfer on worktop and cool.
3. Combine crab meat, onion, spring onion greens, red chilli sauce, mayonnaise and lemon juice in a bowl.
4. Finely chop bird’s eye chilli, add to the bowl and mix well. Add salt and mix again.
5. Put a portion of prepared meat mixture over the baked bread roundels, top with some cheese and place them on a baking tray. Put the baking tray in preheated oven and bake till cheese melts.
6. Serve hot garnished with coriander sprigs.

Preparation Time: 8-10 minutes
Cooking Time: 5-8 minutes
