CORN PALAK PULAO

Ingredients

¾ cup sweet corn kernels, boiled
1 large spinach bunch
4 cups soaked basmati rice
2 tbsps ghee
1 tsp mustard seeds
1 tsp cumin seeds
2 small onions, chopped
Salt to taste
1½ tsps ginger paste
1½ tsps garlic paste
1 tsp coriander powder
1 tsp garam masala powder
1 orange for garnish
Pomegranate pearls for garnish
Raita to serve

Method

1. Shred most of spinach leaves and set aside. Reserve a few for garnish.
2. Heat ghee in a non-stick deep pan, add mustard seeds and let the splutter. Add cumin seeds and let them change colour.
3. Add onions and mix well. Add salt and sauté till onions turn golden brown. Add ginger paste, garlic paste and sauté for 2 minutes.
4. Drain and add rice and mix. Add coriander powder, adjust salt and add garam masala powder.
5. Add sweer corn, spinach and mix well. Add 6-8 cups water and mix well. Cover and cook on low heat till the moisture is absorbed and the rice is cooked completely.
6. Take the pan off the heat and transfer the prepared on a serving plate.
7. Slice orange and garnish the prepared pulao with them along with pomegranate pearls and reserved spinach leaves serve hot with raita.
