No Cooking Cream! Easiest Creamy Mushroom Chicken Chop Recipe Chinese Chicken in Cream Sauce

This Creamy Mushroom Chicken is a simple recipe that you can easily whip up for your family to celebrate Christmas. The cream sauce is extremely yummy because we added cheddar cheese to it. We always have evaporated milk at home because it keeps well and it's a lot less expensive than cooking cream. However, evaporated milk has lesser fat content so adding cheese to your cream will help to make the sauce taste creamier. We are home cooks just like you and we don't like to buy too many ingredients, especially if the ingredients have a short shelf life. It just does not make sense. That's why we have simplified this recipe so that you can easily cook this for your family at home.

Creamy Mushroom Chicken
Ingredients:
Serves 4 pax

Marinated chicken
-------
480g (16.9oz) boneless chicken
1 tablespoon light soy sauce
1 tablespoon oyster sauce
A few dashes of white pepper

- Marinate the chicken for at least 2 hours.
- Coat the chicken with some plain flour and rest them for 10 mins before frying.
- Remember to remove the chicken from your fridge at least 30 mins before cooking otherwise they will be too cold to be cooked evenly.

Mushroom Cream Sauce

3 chopped shallots
220g (7.8oz) fresh button mushrooms (thinly sliced)
10g (0.4oz) unsalted butter (salted butter can be used but adjust the amount of salt used later)
80ml (2.7fl oz) evaporated milk
100ml (3.4fl oz) water (can be replaced with chicken stock)
0.5 teaspoon chicken stock powder (omit this if you're using chicken stock)
2 slices cheddar cheese
0.5 teaspoon salt
A few dashes of white pepper

Note: if you can't get evaporated milk, you can make your own. You just need to gently boil down 180ml of regular milk until it reduces to 80ml.
