COLLARD GREENS WITH RED BEANS

FULL RECIPE FOR COLLARD GREENS

Ingredients
1 bunch of collard greens
1 onion
2 garlic cloves
2 cups tomato sauce*
1 cup water
1 cup canned dark red beans
3 tbsp olive oil
2 tsp salt

Directions:

PERPARATION:
Wash the collar greens with cold water.
Separate the stems and green leaves
Cut the stems into small pieces and set a side
Leaves dont need to cook as long, so they should be separated from the stems
Chop the leaves separately and place them in a separate bowl
Dice the onion and mince the garlic cloves

COOKING:
Pour the olive oil into a medium-sized pot, add the onions and garlics, and stir them on medium heat for 3-4 minutes
Then add the stems of collard greens, stir for 5 more minutes
Add the tomato sauce and a cup of water, cover with a lid and cook for 20-25 minutes
Once the stems become semi-tender, add the leafy parts of the collard greens
Stir the vegetables for 5 minutes and then add the dark red beans and salt
Mix the ingredients gently, cover with a lid and cook for 20 minutes more on medium heat
Until the vegetables become soft but not mushy
