Cabbage & Egg Toast Sandwiches
Servings: 2

INGREDIENTS
8 slices white bread
60g cabbage
30g onions
40g bacon
10g glass noodles
2 eggs
1/3 teaspoon salt
Pepper, as needed
1/2 tablespoon olive oil
1 tablespoon mayonnaise

PREPARATION
1. Shred the cabbage. Slice the onion. Cut the bacon into thin strips. Soak the glass noodles in hot water for 4 minutes and drain well.
2. Separate one of the eggs into the egg white and the yolk. Beat the egg white with another egg.
3. Heat the olive oil in a pan. Cook the onions and bacon strips (1) on medium heat. Add the cabbage, season with salt and pepper. Stir fry until the cabbage is soften. Add the glass noodles (1).
4. Add the eggs (2) into the pan (3) and stir fry. Transfer into a bowl to let cool. Add mayonnaise.
5. Preheat the toaster oven. Spread the egg yolk on the edge of the bread. Put (4) on the bread and place another slice on top. With a chopstick, press down the edges of the bread.
6. Bake in the toaster oven for 4 minutes.
7. Enjoy!
