Dumpling Aburaage
Servings: 2

INGREDIENTS
4 aburaage (deep fried thin tofu)
80g ground pork
100g Chinese chives
1/2 teaspoon salt
30g chopped onions
1 tablespoon chopped gingers
Vegetable oil, as needed

A
1 and 1/2 tablespoon potato starch
1 teaspoon soy sauce
Pepper, as needed

B
2 tablespoons vinegar
1 tablespoon soy sauce
Chill oil, as needed

PREPARATION
1. Cut and open the aburaage.
2. Cut the Chinese chives into 3cm pieces. Rub with salt and squeeze the liquid out.
3. Knead the pork with (2), the onions, the gingers, and all of the ingredients A. Divide them into 4 equal parts and stuff into the aburaage (1).
4. Heat the vegetable oil in a pan (to cover 1cm of the pan). Cook (2) on medium heat until both sides are golden.
5. Drain the oil. Serve with sauce (mix all of the ingredients B).
6. Enjoy!
