Coffee Cheese Flan Layer Jelly

Ingredients in US & UK measurements:
***Jelly mixture:**
2.8 liters water (3 quarts)
50g agar-agar powder (1.76 oz)
450g sugar (15.87 oz or 2 1/4 cup)
2g salt (pinch of salt)
***Cheese flan layer:**
10 egg yolks
400ml condensed milk (13.5 fl.oz or 1 3/4 cup)
600ml whipping cream (20.3 fl.oz or 2.5 cups)
600ml fresh milk (20.3 fl.oz or 2.5 cups)
250g cream cheese (8.8 oz)
***Coffee layer**
1000ml agar-agar jelly mixture (from above) ~ 1 quart
400ml coffee (13.5 fl.oz or 1 3/4 cup)
400ml boiling water (13.5 fl.oz or 1 3/4 cup)
**Instructions:**
Soak agar-agar powder, sugar, and salt in water for 1 hour.
Separate egg yolks. Mix with condensed milk.
In a separate pot, combine cream cheese, whipping cream, and fresh milk. Heat on low until well combined. Turn off the heat when the mixture is smooth.
Cook the soaked agar-agar mixture on medium heat, stirring continuously for about 10 minutes from the boiling point.
Prepare the coffee agar-agar: Mix 1L of agar-agar water with coffee and boiling water. Stir well and cook on medium heat for about 5 minutes.
Slowly pour the cheese mixture into the egg-milk mixture while stirring. Strain the mixture through a sieve into the remaining agar-agar mixture.
For the flan layer, pour the egg-milk mixture into the remaining agar-agar water. Cook on medium heat for an additional 5 minutes.
To prevent layer separation, always keep both pots on the stove over medium heat. Pour the upper layer when the lower layer is slightly set. Run a toothpick on the surface before pouring new layer.
