COCOYAM LEAVES (NKONTONMIRE) ABOMU (STEW)

COOK TIME: 20 MINUTES
SERVES: 6-8

INGREDIENTS
1 bunch of cocoyam leaves (kontomire)
10 pettie belle pepper
1 medium onion
1 medium tomato, charred,
1 Stinky fish (momone), charred.
salted dried tilapia, soaked.
cup palm oil
Salt.

DIRECTION
- On a chopping board, cut off the stalks of the cocoyam leaves, place in a bowl and wash.
- Place a saucepan on medium heat, add cocoyam leaves, water and cook for 5 minutes.
- Pour the pepper into an earthen ware bowl, add onion, salt and grind into a smooth mixture.
- Add the charred tomato, grind then add the charred stinky fish.
- Add cooked cocoyam leaves, grind and adjust salt to your taste.
- Heat palm oil over medium heat then fry salted dried tilapia.
- Pour oil onto the grounded mixture and mix well.
- Top it up with the fried tilapia, avocado and boiled egg.
- Serve with boiled plantain.
