PREP TIME: 10 MINUTESCOOK TIME: 20 MINUTESSERVES: 6-8INGREDIENTS1 bunch of cocoyam leaves (kontomire)10 pettie belle pepper1 medium onion1 medium tomato, charred,1 Stinky fish (momone), charred. salted dried tilapia, soaked. cup palm oilSalt.DIRECTION- On a chopping board, cut off the stalks of the cocoyam leaves, place in a bowl and wash.- Place a saucepan on medium heat, add cocoyam leaves, water and cook for 5 minutes.- Pour the pepper into an earthen ware bowl, add onion, salt and grind into a smooth mixture.- Add the charred tomato, grind then add the charred stinky fish.- Add cooked cocoyam leaves, grind and adjust salt to your taste.- Heat palm oil over medium heat then fry salted dried tilapia.- Pour oil onto the grounded mixture and mix well.- Top it up with the fried tilapia, avocado and boiled egg.- Serve with boiled plantain.
