Season chicken with salt and pepper to taste and add to heated skillet.Fry until golden on both sides, approximately 5 minutes per side.Once browned, remove chicken from pan and set aside.In the same skillet, if needed, add more oil.Add onion and chilis and sauté for 2-3 minutes, or until onions begin to soften.Add coconut milk and honey and deglaze the pan.In a small bowl, whisk together chicken broth and cornstarch and slowly drizzle this into the skillet to thicken coconut milk.Return chicken to the pan and cover. Cook for another 5-7 minutes or until chicken is cooked through.Once cooked, finish with lime juice & zest and freshly chopped cilantro.Enjoy!Mango SaladServings: 3Calories: 317/serving2 mangos, sliced1 red bell pepper, thinly sliced1/2 red onion, thinly sliced1 chilli, minced1/4 cup cilantro, chopped1/4 cup peanuts, chopped (optional)Salad dressing:1-2 limes, zest and juice1 tsp honey2 tbsp olive oilsalt and pepper to tasteIn a small bowl, whisk together all the salad dressing ingredients. Set aside.To assemble salad, add mango, pepper, red onion, chili and cilantro.
