Coconut Ice Christmas Trees and Snowballs

5-Ingredient Snowballs

Makes 24

INGREDIENTS

cup cream
2 tbsp icing sugar
1 tsp vanilla essence
1 cup (210g) chocolate
2 cups (200g ) IMBO Medium Desiccated Coconut

METHOD
1. In a saucepan, bring the cream, sugar and vanilla essence to a boil. Once it reaches boiling point, turn the heat to low and allow the mixture to simmer for 1 minute.

2. Carefully remove the saucepan from the heat and set it on the counter. Add the chopped white chocolate and a a cup of the IMBO Medium Desiccated Coconut to the mixture and whisk well. Set the mixture aside until it has firmed up, about 1 hour.

3. Once the mixture is firm and holds it shape, scoop teaspoon sized amounts and roll them into balls. Roll the balls in the reserved desiccated coconut, serve on a platter and ENJOY!

Coconut Ice Christmas Trees

Makes 16

INGREDIENTS

175g (1 cup) IMBO Medium Desiccated Coconut
100g sweetened condensed milk
150g icing sugar
tsp green food colouring
Christmas themed sprinkles

METHOD

1. In a large bowl, mix together 1 cup of the IMBO Medium Desiccated Coconut with the condensed milk, icing sugar and green food colouring. Stir until everything is well combined and the mixture is green all the way through.

2. Using a tablespoon, divide the mixture into evenly sized balls then flatten the base of each ball on the counter and pinch the top, gently shaping it into a cone shape. Roll each cone into the reserved coconut, all the while ensuring that it does not lose its shape and that the top of the cone is pointed and the bottom, flat.

3. Once they resemble trees, decorate them with edible silver balls and edible sugar stars. Serve on a plate and ENJOY! Chefs Tip: Perfect for gifting this festive season!
