COCONUT FLAKE COOKIES

In this episode, I'd like to share with you one of our favourite cookie recipes. These cookies are yummy, delicious, crunchy and easy to make! And they store well at room temperature.

INGREDIENTS:
2 eggs (at room temp)
1 cup sugar
1/3 cup (75 gr.) margarine (at room temp)
1/3 cup butter (at room temp)
1/2 cup vegetable oil
3 tbsp cocoa powder
1 tsp cinnamon
1 tsp of baking powder
3 and 1/2 cups flour
A pinch of salt
1/2 cup chopped walnuts
1 cup coconut flakes

DIRECTIONS:
Preheat your oven to 175 C (350 F) and line a large baking sheet with parchment paper.
Separate one egg, set aside the white.
In a mixing bowl, beat the yolk and remaining egg just until combined.
Add sugar and beat until smooth and light.
Add margarine, butter and vegetable oil, beat on low speed until smooth.
Sift the cinnamon and cacao powder into the bowl.
Sift the baking powder, 3 and 1/2 cups flour into the bowl.
Add a pinch of salt then start kneading by hand.
Pour 1/2 cup chopped walnut and continue kneading.
Knead the dough for about 30 to 60 seconds, until dough comes together.
Beat the reserved egg white sligthly (add 2 tbsp water)
Tear off walnut-size pieces of dough and roll each into a ball.
Roll them in beaten egg white then coconut and place on the baking sheet.
Repeat this process until all the dough has been used and formed.
I made 35 cookies from this recipe.
Bake for 20 minutes, leave the cookies to cool down and then enjoy :)
