: Coconut Financier Honeykki

Todays menu is coconut financier.
I dont like this type of baked goods that much.
Recently, I tried eating financier for the first time. But it was so good!
I like the crispy outside and sticky inside of financier, so I started to make them at home since then.
Its such a simple recipe except for a few steps. So, try it!

* Ingredients (For 12 financiers ,I used 71x46x19mm oval mold)
100g( 120~130g ), 100g, 120g ( 3 ),
, 55g, 45g, 1tsp
20g

100g brown butter(about 120~130g unsalted butter), 100g sugar, 120g or 3 egg whites
a pinch of salt, 55g coconut flour, 45g cake flour, 1tsp vanilla extract
20g coconut shred for topping

I used only sugar in the video, but you can get more moist and flavorful financier by replacing some of sugar with honey.

* Recipe

1. In a sauce pan, add and boil unsalted butter on low heat until butter turns an amber color(yellow brown) and strain. (Its called brown butter.)

Since the butter is reduce in the boiling, I recommend you use 20~30% more butter.

2. Cool the (1)brown butter in cold water bath until temperature drops to 35~40. (Itll harden if too cold.)

When you cool the brown butter in an ice water bath, you should use a stainless steel bowl, not a glass jar.

3. In a mixing bowl, add and gently whisk egg whites, sugar and vanilla extract until combined
(until small bubbles start to form. Not meringue! Just combine!)

4. Sift flour and coconut flour into (3)batter and mix well. And then, add brown butter in 2~3 parts and mix well.

4. Let the mixture sit in the fridge for at least 1 hour.

6. Thinly coat financier mold with softened butter using brush, fill the batter about 80% of the mold
and sprinkle the coconut shreds.

You have to place the cold batter right into preheated oven.
The extreme difference in temperature makes the cake plumper and prettier.

7. Bake in preheated oven at 175 for 15min until edge is golden brown.

Temperature and baking time may vary due to type of the oven.
