Linguine with clams is an Italian classic and a favorite summertime dish of mine. However, I love a good risotto with clams and scallions too! I prefer to add the clams in their shells, but you can shuck your clams, reserve their liquid, chop them a bit and add them and their juice in the last 5 minutes of cooking.
