Ingredients:
MOIST & SOFT RUM FRUIT CAKE
1/2 cup red candied cherries
1/2 cup mix candied fruit (Tutti fruity)
1/2 cup dried pineapple
1/2 cup gold raisins
1/2 cup prunes
1/4 cup candied dry strawberries
1/4 cup dry cranberries
1 cup brandy or rum

3/4 cup cashew-nuts
3/4 cup walnuts
1 & 3/4 cup cake flour (230gram )
1 teaspoon baking powder
1 teaspoon cinnamon powder
teaspoon nutmeg powder
teaspoon ground cloves
tsp ginger powder
all spice powder
1 cup butter (250gram)
1 cup dark brown sugar (200gram)
3 Eggs
1 teaspoon vanilla extract
2 tablespoon brandy
3 tablespoon orange juice
zest of 1 medium lemon
zest of one orange

EGGLESS CHRISTMAS FRUIT CAKE

1 1/2 CUPS ALL PURPOSE FLOUR (200 grams)
1/2 TEASPOON SALT
1 TEASPOON BAKING SODA
1/2 TEASPOON GRATED NUTMEG
3/4 TEASPOON GROUND CINNAMON
1/4 TEASPOON GROUND GINGER
1/4 TEASPOON GROUND CLOVES
1 CUP BUTTERMILK (240 ml/grams)
1/2 CUP UNSALTED BUTTER, MELTED (113 grams)
1/2 TEASPOON VANILLA EXTRACT
3/4 CUP LIGHT BROWN SUGAR (150 grams)
2 CUPS DREID OR CANDIED FRUITS(RAISINS, CURRANTS, DRIED DATES, DRIED FIGS, DRIED CRANBERRIES, DRIED OR CANDIED CHERRIES, APRICOTS, MIXED PEEL ETC.) (300 grams)


LAST-MINUTE CHRISTMAS CAKE RECIPE
To Soak :

cup rum or brandy
1 cup dry fruits and nuts (combination of raisin, dark raisin, seedless dates, dried cranberries, dried blueberries, glazed cherries, tutti frutti, almonds, cashew-nuts and walnut)
1 tbsp Orange zest
Juice of two oranges

For Cake Batter :

1 cup all-purpose flour
1 tsp. baking powder
3 large eggs
1/2 cup brown sugar
3 tablespoon cocoa powder powder
tsp. cinnamon powder
cup olive oil / vegetable oil / canola oil (or) 6 tbsp unsalted butter
tsp. nutmeg powder

NO-ALCOHOL CHRISTMAS FRUIT CAKE

1 Cup water (240 ml)
1 Cup light brown sugar (200 grams)
1/4 Cup butter (55 grams)
1 teaspoon Cinnamon Powder
1/4 Teaspoon Cloves Powder
1 Teaspoon Ginger Powder
2 cups dry fruits (dry cranberries, blue berries, prunes, raisins, almonds, cashew-nuts, walnuts, dry apricot, dry fig etc) (300 grams)
2 Eggs
1 1/2 Cups All-purpose flour (195 grams)
1 Teaspoon Baking Soda
1 Teaspoon Vanilla extract (optional)
