This Chow Chow Curry is an easy recipe that can done in any kitchen with very few ingredients. Join me in one more of my kitchen adventures!Ingredients:● Chayote Squash - 2● Mung dal/yellow split lentil - 2 tbsp● Coconut chunks - ⅞ or grated coconut - ¼ cup● Green chillies - 4● Mustard seeds - ½ tsp● Urad dal - 1 tsp● Asafoetida - to taste● Oil - 4 tsps● Salt to tasteMethod:● Chop the Chayote Squash into medium sized chunks● Pressure cook the Chayote squash along with the mung dal/yellow gram lentil - wait for 3 whistles and switch off the flame. The vegetables should be just cooked and NOT mushy● Meanwhile grind the coconut and green chillies together and keep aside● Heat few tsps of oil in a pan and splutter mustard seeds● Then add the Urad dal and roast● Next add some asafoetida● Now, add the cooked Chayote Squash and dal to the pan● Toss lightly everything together● Now, it’s time to add the ground coconut mix to the curry● Gently toss everything together adding salt as required● Serve hot
