Chow-Chow Curry/Bottle Gourd Curry/Squash Subzi/eat with rotis or with rice | Sujan Fun Kitchen

This Chow Chow Curry is an easy recipe that can done in any kitchen with very few ingredients. Join me in one more of my kitchen adventures!
Ingredients:
● Chayote Squash - 2
● Mung dal/yellow split lentil - 2 tbsp
● Coconut chunks - ⅞ or grated coconut - ¼ cup
● Green chillies - 4
● Mustard seeds - ½ tsp
● Urad dal - 1 tsp
● Asafoetida - to taste
● Oil - 4 tsps
● Salt to taste
Method:
● Chop the Chayote Squash into medium sized chunks
● Pressure cook the Chayote squash along with the mung dal/yellow gram lentil - wait for 3 whistles and switch off the flame. The vegetables should be just cooked and NOT mushy
● Meanwhile grind the coconut and green chillies together and keep aside
● Heat few tsps of oil in a pan and splutter mustard seeds
● Then add the Urad dal and roast
● Next add some asafoetida
● Now, add the cooked Chayote Squash and dal to the pan
● Toss lightly everything together
● Now, it’s time to add the ground coconut mix to the curry
● Gently toss everything together adding salt as required
● Serve hot
