Chorizo and chickpea recipe Spanish Taster

Looking for a chickpea recipe that is fast and filling? This Spanish dish uses chorizo sausage and can be made in under ten minutes. Its a great as a tapa, a brunch or a quick dinner.

Ingredients:
1 Tablespoon olive oil
red onion sliced thinly
1 clove minced garlic
1 chorizo sausage (about 70gms)
1 tomato, grated
1 Tablespoon chopped parsley
200g cooked and drained chickpeas (garbanzos)
