A delectable vegetarian burger which has a protein-filled tikki made with chickpeas and is going to outrank any other favourite burgers of yours!CHOLE TIKKI BURGERIngredients1½ cups boiled chickpeas (chole) 4 burger buns, horizontally cut in half2 medium potatoes, boiled, peeled and grated¼ cup grated cottage cheese (paneer)2 tsps dried pomegranate seeds (anardana) powder1 small onion, finely chopped1-2 green chillies, chopped1 tsp ginger paste1 tsp garlic paste2 tsps Tata Sampann Chilli Powder1 tsp coriander powderSalt to taste1 tsp garam masala powder½ tsp cumin powderA pinch of chaat masala2 tbsps chopped fresh coriander leaves 2 tbsps chopped fresh mint leaves½ lemon½ cup bread crumbs½ tsp oil + for greasing + for deep frying4 cheese slicesDip¼ cup thick yogurt, chilledA pinch of roasted cumin powder1 tbsp green chutney1 tsp fried garlicSalad1 small green capsicum, thinly sliced1 medium tomato, deseeded and thinly sliced1 small carrot, cut into thin strips1 medium onion, thinly slicedSalt to taste½ tsp Tata Sampann Chilli Powder½ lemonTo servePotato chips Fried green chilliesMethod1. Put boiled chickpeas in a chopper and crush to a coarse mixture. Transfer on a large plate.2. Add boiled potatoes, cottage cheese, dried pomegranate seeds powder, onion, green chillies, ginger paste, garlic paste, Tata Sampann Chilli Powder, coriander powder, salt, garam masala powder, cumin powder, chaat masala, coriander leaves, mint leaves, and squeeze the juice of lemon and mix well.3. Add bread crumbs and mix till well combined. Make a well in the centre of the mixture.4. Take a few hot coal pieces in a small stainless steel bowl and place it in the centre of the chickpeas mixture. Drizzle some oil and immediately cover with a large bowl and set aside for 3-4 minutes.5. Remove the bowl, discard the coal pieces and mix the chole mixture once.6. Grease your palms with some oil, take a portion of the mixture and shape it into a tikki.7. To make the dip, take yogurt in a bowl. Add roasted cumin powder, green chutney and fried garlic and mix well.8. To make the salad, take green capsicum in a bowl. Add tomato, carrots, onions, salt and Tata Sampann Chilli Powder and mix well. Squeeze the juice of lemon and mix till well combined.9. Heat sufficient oil in a kadai. 10. Gently slide the patty into the hot oil and deep fry till golden brown and crisp. Drain on absorbent paper. 11. Heat some butter in a non-stick grill pan, place the burger buns and toast till grill marks appear on one side. 12. To make the burger, place the bottom part of the burger bun on a worktop, apply a portion of the dip, place the fried tikki, place a cheese slice and add a portion of the salad. Apply the dip on the remaining part of the burger bun and cover the burger with it. 13. Place the chole tikki burger on a serving plate and serve hot with fried green chillies and potato chips.
