There is nothing as too much chocolate and so here is recipe #2 in anticipation of #WorldChocolateDay! Peanuts with Chocolate is one of the most popular flavour combinations. Rich and creamy chocolate cut through by the nuttiness of the peanuts makes this one hard to resist.

CHOCOLATE PEANUT BAR

Ingredients

½ cup roasted peanuts
150 grams castor sugar
½ cup fresh cream
1 tbsp butter
2 tbsps liquid glucose
200 grams milk chocolate mini bars
50 grams dark chocolate mini bars
Creamy peanut butter for piping

Method

1. Roughly chop peanuts. Set aside.
2. For the caramel, melt castor sugar in a non-stick pan, swirl the pan to avoid burning the sugar.
3. Add cream and mix well. Add butter and mix well. Add glucose and mix, switch the heat off and add peanuts, mix and allow to cool completely.
4. Take milk chocolate and dark chocolate in a double boiler and let them melt.
5. Temper the chocolate by continuously mixing it till the temperature reaches 30˚C - 32˚C.
6. Fill the chocolate into moulds and tap it. Allow to set for a few seconds and tip it over to empty the mould and remove the excess chocolate. Refrigerate till set.
7. For assembly, add a thin layer of peanuts and caramel mixture in each chocolate cavity.
8. Take peanut butter in a piping bag and pipe out a thin layer on top of the peanuts and caramel mixture.
9. Pour chocolate on each mould and tap to level the top. Gently scrape off the excess chocolate using a palate knife and set aside in the refrigerator to set.
10. De-mould, wrap and serve.
