CHOCOLATE MINT COOKIESIngredients½ cup chopped dark chocolate15-20 fresh mint leaves, chopped1½ cups butter1 cup powdered sugar2 cups refined flour1 cup rice flourMethod1. Preheat oven to 180° C. Line a baking tray with silicon mat.2. Cream together butter and powdered sugar in a bowl using an electric beater. 3. Add mint leaves, sieve in refined flour and rice flour, mix and whisk well. Mix the mixture till well combined.4. Divide the mixture into equal portions, shape into balls and lightly flatten. Place on a baking tray.5. Put the tray into preheated oven and bake for 10-15 minutes. Remove from oven and cool.6. Take dark chocolate in a microwave proof bowl. Place the bowl into the microwave and heat for 30 seconds. Remove from microwave, mix well till melts and bring down to room temperature.7. Coat the top of each cookie into melted dark chocolate, place on the tray and let the chocolate half sets.
