Classic French madelines up a notch or two by making these chocolate versions. They are easy to make and perfect for any occasion.CHOCOLATE MADELINESIngredients85 grams chopped dark chocolate 255 grams refined flour (maida) 142 grams butter18 grams cocoa powder½ teaspoon salt170 grams castor sugar 2 egg yolks1 teaspoon vanilla essence3 eggsIcing sugar for dustingTea for servingMethod1. Preheat oven to 200° C.2. Heat some water in a deep non-stick pan. Place a bowl, add chocolate and butter and mix till it melts, stirring occasionally. Remove from heat, whisk and bring down to room temperature.3. Sift together flour, cocoa powder, salt and castor sugar in a bowl. 4. Add half of flour mixture into the melted chocolate-butter mixture and whisk. Add egg yolks and vanilla essence and whisk well.5. Add eggs and whisk. Add remaining flour mixture and fold well. 6. Fill a piping bag fitted with a nozzle with the prepared batter and pipe out into silicon Madeline moulds and tap.7. Put the tray into the preheated oven and bake for 10-12 minutes.
