CHOCOLATE HAZELNUT BOMB

Ingredients

200 grams hazelnuts
¾ cup fresh cream
100 grams dark chocolate bars
¼ cup chocolate hazelnut spread
250 grams milk chocolate bars
8-10 wafer shells

Method

1. Preheat the oven at 180˚C. Take hazelnut on a baking tray and roast for 10-15 minutes.
2. Meanwhile, gently simmer fresh cream in a non-stick pan. Take the pan off the heat.
3. Break dark chocolate and add into the hot cream, mix till it melts. Add chocolate hazelnut spread and mix well. Transfer into a bowl and refrigerate till set.
4. Take the tray out of the oven and allow to cool slightly. Place them on a worktop and finely chop ½ of them and reserve the rest.
5. Take milk chocolate bars on a worktop and roughly chop them and transfer into a large bowl.
6. Take the prepared chocolate-hazelnut mixture into a piping bag and snip the tip.
7. Take each wafer shell and pipe out the prepared ganache in it. Place each with one of the reserved roasted hazelnut in the centre and join both the halves to make a ball.
8. Place the chopped milk chocolate on a double boiler and melt the chocolate. Take the bowl off the heat and temper the chocolate by continuously mixing till it reaches 30˚C-32˚C.
9. Add the chopped hazelnut into the milk chocolate and mix. Dip each prepared wafer balls into the mix and coat well. Shake off the excess chocolate using a fork and place on a plate. Refrigerate till set.
