Chocolate Cake

Make 1 8-inch layered cake

Ingredients:

Chocolate Cake:
190 grams of unsalted butter, soften
250 grams of fine white sugar
2 eggs
1 tsp. of vanilla extract
55 grams of cocoa powder
225 grams of plain flour
1 tsp. of baking powder
1 tsp. of baking soda
330 ml of buttermilk
tsp. of salt

Chocolate frosting:
2 x recipes of Ultimate Chocolate Buttercream (URL: http://youtu.be/kA0LQtrStBM)
5 packets of chocolate Pocky biscuit
500 grams of strawberries

Glaze:
1 tbsp. of apricot preserve
1 tbsp. of water

Directions:

To make the Chocolate cake,

1) Preheat oven to 180/160C fan-forced.

2) Grease and line 2 8-inch round cake pans.

3) In a medium bowl, whisk plain flour, baking soda, powder and salt together. Set aside.

4) In a measuring cup, whisk eggs and vanilla extract. Set aside.

5) In your mixing bowl, beat butter and sugar until light and fluffy on high speed.

6) Turn down to medium speed and drizzle in beaten egg mixture.

7) Throw in cocoa powder. Mix until combined.

8) Turn your mixer down to low and drizzle in buttermilk.

9) Lastly, gradually add in your flour mixture.

10) Transfer into your 2 baking pans evenly. Drop the pan to release the air bubbles out.

11) Bake it in a preheated oven for about 30 to 35 minutes.

12) Let it cool in the pan while we make our chocolate frosting.

13) Prepare some sliced strawberries. Prepare chocolate Pocky by removing the yellow bottom of the biscuits. Layer the first layer on your platter, spread a layer of buttercream and place sliced strawberries. Cover it with buttercream again.

14) Sandwich the second layer on top and cover the whole cake with buttercream. (You dont really need to be really evenly as youll be covering it with Pocky and strawberries later)

15) Strain apricot preserve with some water together to make it a glaze. Set aside

16) Carefully layer Pocky biscuits at the side until the side is fully covered.

17) Top the cake with strawberries. Brush them with apricot glaze.

18) Let it cool in the fridge. Serve.
