Coconut, cocoa powder and chocolate chips make these macaroons exciting

CHOCO COCONUT MACAROONS

Ingredients

250 gms scraped fresh coconut
2 eggs
A pinch cream of tartar
100 gms castor sugar
1 tsp vanilla essence
1 tbsp cocoa powder
2 tbsps almond powder
50 gms chocolate chips

Method

1. Preheat oven to 180º C.
2. Break eggs, separate the yolks and whites into two separate bowls. Use the whites for this recipe. Beat the whites well with an electric beater. Add cream of tartar and continue to beat.
3. Add sugar little by little and beat well.
4. Add coconut and mix well. Add vanilla essence, cocoa powder and continue to mix. Add almond powder and chocolate chips and mix again lightly.
5. Place a silicon sheet on a baking tray. Place spoonsful of mixture on the sheet with enough space between each. Spread them about 3½ inch roundels.
6. Bake in the preheated oven for 20 minutes.
7. Remove the tray from the oven, cool the macaroons, arrange on a serving plate and serve.
