Everyone needs chocolate right? This recipe will definitely satisfy the chocoholic!

It's creamy, light and fluffy. It's also the chocolate lover's dream.

You can use dark chocolate in the recipe or milk chocolate or a combination of both.

You will also notice that I topped my mouse with whipped cream and a cute heart shaped chocolate decoration. Your Valentine needs a chocolate decoration on top to finish it off don't they?

Chocolate Mousse Recipe

Ingredients:
1 1/2 cups of milk chocolate chips
2 Tbsps cocoa powder
1 tsp. organic vanilla extract
1 Tbsp. organic butter
1 cup lite or regular coconut milk
2 cups (16 oz.) organic heavy whipping cream, well chilled
2 Tbsp. sugar


Directions:

Place a mixing bowl and mixer beaters in the freezer.

Place the coconut milk, in a double boiler and after it gets warm, add the cocoa powder and stir until it's dissolved. Add the chocolate chips and butter in a double boiler. Stir until the chocolate chips melt over simmering heat.

Make sure the water in the double boiler doesn't touch the bottom of the pan with the chocolate. Stir until the chocolate is completely melted into the coconut milk and is smooth. Then stir in the vanilla extract.

Remove from the heat and let it cool to room temperature.

Place the whipping cream into the chilled bowl and add 2 tablespoons of sugar. With the chilled beaters, mix the cream until it is firm. Then fold the cream into the cooled chocolate mixture. Do not over mix. You don't want to deflate the whipping cream.

Once the whipping cream is mixed in, place the mousse into serving bowls and chill for at least 2, 4 and even 24 hours before serving.

Top with whipping cream and a chocolate covered heart that you made yourself! I'll have a video for that soon.
