Rice and vegetables cooked in a clay pot in Chinese style

CHINESE STYLE VEGETABLE CLAY POT RICE

Ingredients

1 cup short grained rice, soaked
2 tbsps olive oil
2 medium onions
2 medium carrots
1½ tbsps grated ginger
1½ tbsps grated garlic
1 tsp soy sauce
3 cups vegetable stock
½ tsp black pepper powder
1 tsp sesame oil

Method

1. Heat 2 tbsps olive oil in a pan. Roughly chop onions and add and saute.
2. Cut carrots into medium sized pieces and add. Add ginger and garlic and saute.
3. Add soy sauce and vegetable stock and mix. Drain and add rice and pepper powder and mix. Cover and cook on low heat till half done.
4. Transfer the mixture into a claypot. Add sesame oil. Cover and cook for 25-30 minutes or till the rice is completely cooked. Ensure that it is still moist.
5. Serve hot.
