Chinese French Fries | Sanjeev Kapoor Khazana

The classic fries get a dash of Indo-Chinese flavours.

CHINESE FRENCH FRIES

Ingredients

1½ cups French fries
1 tbsp oil
4 spring onion bulbs, finely chopped
6-7 mushrooms, sliced
1 small carrot, cut into thick strips
8-10 broccoli small florets
Salt to taste
1½ tbsps red chilli sauce
2 tsps soy sauce
2-3 spring onion greens, chopped
1 tbsp burnt garlic + garnish

Method

1. Heat oil in a non-stick wok, add spring onion bulbs and sauté till translucent. Add mushrooms, toss well and cook for 1 minute.
2. Add carrot, broccoli, toss well and add salt, mix well and cook for 1-2 minutes.
3. Add red chilli sauce, soy sauce and French fries, toss well. Add spring onion greens and burnt garlic, toss well. Take it off the heat.
4. Garnish with burnt garlic and serve hot.
