Chinese Chicken Salad

Ingredients

4 cups thinly sliced Napa or green cabbage
2 cups thinly sliced red cabbage
1 cup shredded or matchstick carrots
2 cups pre cooked and shredded or cubed chicken
1/2 cup sliced green onions
1/4 cup toasted sliced almonds
1 cup drained mandarin oranges in water
1/4 cup cilantro
3/4 cup won ton strips or chow mein noodles
2 tablespoons sesame seeds

Dressing:
1/4 cup soy sauce
1/4 cup rice wine vinegar
2 tablespoons toasted sesame oil
2 cloves crushed garlic
2 teaspoons freshly minced ginger
1 teaspoon sugar
1 teaspoon pepper


Instructions

1 Prepare the dressing by combining soy sauce, rice wine vinegar, toasted sesame oil, crushed garlic, minced ginger, sugar, and pepper in a small bowl. Whisk until well combined.

2 In a large mixing bowl, combine thinly sliced Napa cabbage, shredded carrots, sliced green onions, and cooked chicken.

3 Add drained mandarin oranges and cilantro to the bowl and toss all the ingredients together.

4 Drizzle the dressing over the salad and toss everything together until the dressing is evenly distributed.

5 Top the salad with won ton strips or chow mein noodles and sesame seeds just before serving.
