CHILLI CHEESE EGG DOSA

Ingredients

2-3 green chillies
Red chilli flakes for sprinkling
Grated mozzarella cheese for sprinkling
4 eggs
Dosa batter as required
2-3 spring onions
Oil for drizzling + for greasing
Tomato ketchup to serve

Method

1. Chop the spring onions with the greens. Finely chop green chillies.
2. Heat oil in a non-stick tawa. Grease it with some oil.
3. Pour a portion of the batter into the centre and spread it in a clockwise direction to make a thin disc. Drizzle oil and cook for 1-2 minutes.
4. Break the egg on top and place the egg yolk in the centre. Sprinkle some of the spring onion, a few pieces of chopped green chillies, sprinkle cheese, chilli flakes and continue to cook for 1 minute.
5. Fold ¼ of the dosa from four sides to shape it like a square. Serve hot with tomato ketchup.
