RECIPE

Ingredients:

Unsalted butter, 1 tablespoon
Olive oil, 1 tablespoon
Onion, 1 medium-sized, chopped
Potato, 1 small, peeled and chopped
Carrot, 1, peeled and sliced
Celery stalk, 1, sliced
Beets, 3 medium-sized, peeled and chopped
Chicken or vegetable stock, 4 cups
Salt, as per taste
Fresh cracked pepper, as per taste
Lemon juice, ½ tablespoon
Heavy cream or Greek yogurt, 1 cup

Method:

Melt the butter and oil in a heavy pot and saute all the vegetables for about 5 minutes over medium heat.
Add in the stock and bring the mixture to a boil. Simmer on low heat for about 1/2 hour or until the vegetables are tender.
Switch off the heat and season with the salt, pepper and lemon.
Puree the soup in a blender and strain through a mesh strainer to catch any stray chunks.
Stir in the cream/yogurt.
Chill for several hours and then serve garnished with the sour cream, mint, or dill.
