CHICKPEA RICE PILAF RECIPE - Simple But Delicious Street Food

In this episode, Id like to show you my version of chickpea rice pilaf recipe. We cant get enough of this amazing street food, during the winter. I serve the dish, just like street vendors in our neighbourhood do. You should also know, if your guest or company ask for: chickpea rice pilaf with chicken, please, they have to pay an extra for the meat :)

INGREDIENTS (serves 3-4)
1 kg. (2 pounds) chicken drumstick
1 big mug uncooked long grain rice (I use basmati)
1 cup cooked chickpeas
2 tbsp butter
1 tbsp olive oil
1 bay leaf
1/2 lemon
A pinch of granulated sugar
Salt & blackpepper
Pickled cucumber to garnish

DIRECTIONS
Fill a big pan with water.
Transfer drumsticks to the pan, bring to a boil over medium high heat.
Using a spoon, skim off the foam.
Reduce heat to the lowest possible setting.
Add 1 leveled tsp or to taste salt, a good pinch of pepper and bay leaf.
Mix gently.
Cover and simmer for 1 hour, leaving the lid slightly ajar.
When the time is up, check for doneness.
Turn off the heat and transfer drumsticks to a bowl, let cool.
Fish the bay leaf and discard :)
Cover and set aside the chicken stock, making sure to keep warm.
Rinse and drain the rice thoroughly.
Drizzle with juice of 1/2 lemon, mix.
Lemon juice helps to keep rice beautifully white, when cooking with butter.
Transfer 2 tbsp butter and 1 tbsp olive oil to a large, non-stick pan.
Heat until sizzled, over medium low heat.
Add rice, and 1 leveled tsp or to taste salt.
Sautee for 3-4 minutes, or until sizzled and sticky, stirring constantly.
Measure 2 mugs chicken stock and add to rice.
Add chickpeas, mix gently.
Sprinkle a pinch of sugar and black pepper.
Bring to a boil, over medium heat, stirring gently.
Then reduce heat to the lowest possible setting.
Cover and cook for about 12-14 minutes, or until all the liquid is absorbed.
Meanwhile, remove and discard the skin and bones of the drumsticks, using your very clean hands.
Then tear into shreds.
Set aside and keep warm, you can also reheat it, if needed.
Check rice for doneness, then turn off the heat.
Cover the pan with some paper towels, then the lid.
Let rest for 15 minutes.
Mix gently.
Place a small portion of meat, to the bottom of a serving plate, making sure to get the extra payment :)
Add a generous portion of pilaf on top.
Garnish with pickled cucumber slices, and serve immediately with some ayran on the side.
