चिकू बर्फी | Chickoo Burfi | Sanjeev Kapoor Khazana

A deliciously rich burfi with the goodness of season's favourite- Chickoo, is absolutely lip-smacking. The sweet delight is loaded with nuts to enhance the taste.

CHICKOO BURFI

Ingredients

8 chickoo, peeled, deseeded and grated
3 tbsps slivered mixed nuts (pistachios, almonds, and cashew nuts)
¼ cup grated mawa
⅓ cup chopped jaggery
½ tsp green cardamom powder
¼ tsp cinnamon powder
2½ tsps ghee + for greasing
Silver varq for garnish

Method

1. Dry roast slivered nuts in a non-stick pan on low heat for 3-4 minutes. Transfer on a plate.
2. Transfer the chickoo into the same pan and continuously stir and cook on low heat for 5-6 minutes or till the chickoo turns soft and pulpy.
3. Add mawa and mix well. Cook for 3-4 minutes.
4. Add the jaggery and mix well. Cook till it melts.
5. Continue to stir and cook till the mixture leaves the sides of the pan.
6. Add green cardamom powder and cinnamon powder and mix well. Add ¾ of the roasted nuts, and ghee and mix till well combined.
7. Grease a burfi tray with some ghee. Add the mixture into it and spread it evenly till the top is leveled. Sprinkle the remaining roasted mixed nuts and press it lightly.
8. Set it aside to cool completely.
9. Apply silver varq, cut into squares and arrange on a serving plate. Serve.
