CHICKEN WITH BAMBOO SHOOT

Ingredients

200 grams boneless chicken, cut into ½ inch cubes
2 tbsps chopped bamboo shoot
2 tsps coarsely blended mixture of 4 garlic cloves and 3 dry red chillies
1 medium tomato, concassed and blanched
1 ghost chilli (bhoot jalokia)
1-2 drops mustard oil
Steamed rice to serve

Method

1. Cover and boil 2 glasses of water in a deep non-stick pan.
2. Add garlic chilli mixture. Peel and chop a blanched tomato and add in pan. Mix well. Add chicken. Combine well. Add salt. Cover and cook on medium heat for 10 minutes.
3. Add bamboo shoot, slice and add 2-3 slices of bhoot jalokia. Add mustard oil. Cover and cook on medium heat for 2 minutes. Switch off heat.
4. Transfer prepared dish on a serving bowl.
5. Serve hot garnished with a flower made of remaining part of the bhoot jalokia chilli. Serve with steamed rice.
