Chicken and waffle sandwiches are the perfect combination of chicken, waffles, sauce and pickles! They're irresistible!

CHICKEN WAFFLE SANDWICH

Ingredients

2 boneless chicken breasts, boiled and shredded
1½ cups refined flour (maida)
Salt to taste
1 teaspoon baking powder
2 eggs
1½ cups buttermilk
Crushed black peppercorns to taste
1 fresh oregano sprig
1 fresh rosemary sprig
1 fresh thyme sprig
Butter for greasing
2 stalks spring onions
2 tablespoons mayonnaise
2 medium tomatoes
Few romaine lettuce leaves
4 cheese slices
Tomato ketchup for serving

Method

1. Put flour in a bowl. Add salt and baking powder and mix. Add eggs and whisk. Add buttermilk and whisk well to make a semi-thick batter.
2. Add crushed peppercorns, oregano leaves, rosemary leaves and thyme leaves and whisk well.
3. Heat an electric waffle iron and grease with some butter. Pour the batter, cover and cook till golden brown.
4. Slice spring onion.
5. Put chicken in a bowl. Add sliced spring onion, salt, crushed peppercorns and mayonnaise and mix well.
6. Cut tomatoes into roundels.
7. To prepare one waffle sandwich, place 1 torn romaine lettuce leaf, some chicken mixture, tomato roundels, one cheese slice and cover with another waffle.
8. Cut into triangles and serve hot with tomato ketchup.
