Chicken Tikka Matka Biryani
Ingredients for Chicken Marination:
Boneless Chicken (cubes) 1 kg
Salt to taste
Ginger garlic paste 1 tbsp
Yogurt 2 tbsp
Lemon juice 2 tbsp
Red chili powder 1 ½ tsp
Garam masala powder 1/2 tsp
Oil 1 tbsp
Black pepper powder 1 tsp
Orange food color 1/4 tsp
Ingredients for Rice Preparation:
Water (for soaking) as required
Falak Basmati Rice 2 cups
Water (for boiling) as required
Salt 1 ½ tsp
Oil 2 tbsp
Vinegar 1 ½ tbsp
Cumin seeds 1 tsp
Cinnamon stick (small) 1 inch
Black cardamom 1
Green cardamon 3
Star anise 1
Bay leaves 2
Soaked rice 2 cups
Ingredients for Tikka Biryani Masala:
Marinated Chicken (for grilling)
Oil (for grilling) 1 tsp
Oil (for cooking) 1/2 cup
Onion (Sliced) 1/2 cup
Tomato slices 1/2 cup
Ginger garlic paste 1 tbsp
Salt to taste
Red chili powder 1/2 tsp
Turmeric powder 1/2 tsp
Cumin powder 1/2 tsp
Coriander powder 1/2 tsp
Red chili flakes 1/2 tsp
Yogurt 1/2 cup
Grilled chicken tikka
Ingredients for Garnish:
Coriander as required
Mint as required
Green chilies (Julienne) as required
Tomatoes (Julienne) as required
Lemon slices as required
Orange food color 1/2 tsp
Directions for Chicken Marination:
In a bowl, add boneless chicken cubes, salt, ginger garlic paste, Yogurt, lemon juice, red chili powder, garam masala powder, oil, black pepper powder and orange food color. Mix well and marinate for 30-40 minutes.
Directions for Rice Preparation:
In a bowl, soak rice for 25-30 minutes.
In a pot add water and bring it to boil. Then add salt, oil, vinegar, cumin seeds, cinnamon stick, black cardamom, green cardamom, star anise and bay leaves. Let boil for 2 minutes.
Now add soaked rice and cook until 80% done. Strain and set aside.
Directions for Chicken Tikka Preparation:
Now, thread your marinated tikka pieces on skewers.
Brush oil on pre-heated grill pan with oil and grill your tikka skewers from all sides for 4-6 minutes or until fully cooked.
Take the cooked tikka skewers off the flame and set aside.
Directions for Tikka Biryani Masala:
Now, heat oil in a pot, add onion and cook until they start to get golden. Add ginger garlic paste and cook for another 2 minutes. Add tomatoes and cook until they start to change color.
Add salt, red chili powder, red chili flakes, turmeric powder, cumin powder, coriander powder and cook until oil separates.
Add yogurt and cook for 5-7 minutes on medium low flame.
Add grilled chicken tikka into the prepared gravy, give it a good mix and your tikka biryani masala is ready.
Directions for Assembling:
Now take clay pot, add layer of masala with oil, boiled rice, masala and tikka, boiled rice, garnish and orange food color.
Cover it with foil paper and seal tightly.
Heat up the coals and place the clay pot on them. Place few burning coals on the foil paper on top of clay pot. Let it stay for 10-15 minutes.
Serve hot and enjoy.
