Arabic Shawarma

Ingredients for Chicken Marination:
Chicken fillets 1 kg
Salt 1 tsp / to taste
Yogurt 2 tbsp
Paprika powder 2 tsp
Turmeric powder 1/2 tsp
Onion powder 1/2 tbsp
Ginger garlic paste 1 tbsp
Cumin powder 1 tsp
Coriander powder 1 tsp
Black pepper powder 1 tsp
Cinnamon powder 1 tsp
Red chili flakes 1 tsp
Lemon juice 2 tbsp
Oil 1 tbsp
Oil (for cooking) 1/4 cup

Ingredients for Shawarma Sauce:
White sesame seeds 2 tbsp
Garlic clove 1
Lemon juice 1 tsp
Mayonnaise 1/4 cup
Salt 1/2 tsp
Black pepper powder 1/2 tsp
Oregano 1/2 tsp
Oil 1/2 tbsp

Ingredients for Red Chili Paste:
Whole red button chilies (soaked) 1/4 cup
Garlic clove 1
Salt a pinch
Cumin seeds 1/2 tsp
Vinegar 2 tbsp
Oil 1 tsp

Ingredients for Sauteed Vegetables:
Oil 2 tbsp
Onion (sliced) 1 cup
Capsicum (julienne) 1 cup
Salt a pinch

Ingredients for Assembling:
Tortilla sheets as required
Red chili paste as required
Shawarma sauce as required
French fries as required
Sauted vegetables as required
Shredded chicken as required
Iceberg lettuce as required
Melted butter (for greasing)

Directions for Chicken Preparation:
1. In a bowl add yogurt, salt, paprika, turmeric powder, onion powder, ginger garlic paste, cumin powder, coriander powder, black pepper powder, cinnamon powder, red chili flakes, oil and mix well. Now add chicken fillets into this marinade and let it rest for 20-25 mins.
2. In a pan heat oil and add marinated chicken fillets. Cook each side for 3-4 mins or until fully done. Take off flame and cut the chicken into strips. Set aside.
Directions for Shawarma Sauce Preparation:
3. In a blender add mayo, white sesame seeds, garlic, lemon juice, salt, black pepper powder, oregano, oil and blend well into smooth paste. Your shawarma sauce is ready.
Directions for Red Chili Paste:
4. In a blender add whole red button chilies, garlic, salt, cumin seeds, vinegar, oil and blend it well. Set aside.
Directions for Sauteed Vegetables Preparation:
5. In a pan heat oil and add onion, capsicum, salt and cook for 1-2 mins. Set aside.
Directions for Assembling:
6. Take a tortilla sheet, spread red chili paste, shawarma sauce on it.
7. Add French fries, sauted vegetables, shredded chicken, icerberg lettuce and wrap the tortilla sheet in a wrap shape.
8. Grill the wrap on greased grill pan until golden brown from each side.
9. Your Chicken Shawarma in Arabic Style is ready. Serve and enjoy.
