Chicken Satay with Peanut Sauce | Sanjeev Kapoor Khazana

Popular chicken starter from the Thai Cuisine served hot with peanut sauce.

CHICKEN SATAY WITH PEANUT SAUCE

Ingredients

2 boneless chicken breasts, cut into ½ inch wide strips
2 tablespoons Thai red curry paste
1 tablespoon Japanese soy sauce
Salt to taste
Oil for grilling
Peanut sauce
½ cup peanut butter
1 tablespoon oil
2 teaspoons chopped garlic
1½ teaspoons chopped ginger
1 medium onion, finely chopped
1-2 fresh red chillies, finely chopped
¾ cup coconut milk
Salt to taste
1 teaspoon Japanese soy sauce
½ teaspoon honey
1 teaspoon tamarind pulp

Method

1. Mix together red curry paste, soy sauce and salt in a bowl. Add chicken strips and mix again. Set aside to marinate for 1-2 hours.
2. To make the peanut sauce, heat oil in a non-stick pan. Add garlic, ginger and onion and sauté for a minute.
3. Add red chillies and mix. Add peanut butter, mix well and cook for a minute.
4. Add coconut milk and mix. Add salt and soy sauce and mix well.
5. Add honey, mix and cook for a minute. Add tamarind pulp, mix and simmer for a minute. Remove from heat and set aside.
6. Heat some oil in a non-stick grill pan.
7. Skewer the marinated chicken strips onto individual satay sticks, place in the pan and grill till the chicken is fully cooked and grill marks appear on both sides.
8. Serve hot with peanut sauce.
