Chicken Roulade with Fiery Chicken Fries

Ingredients for Spinach Filling:
Water as required
Spinach 1 kg
Oil 3 tbsp
Mushrooms 1/2 cup
White pepper powder 1 tsp
Salt 1/2 tsp / to taste
Oregano ½ tbsp.
Cream 1 cup

Ingredients for lemon butter sauce:
Butter 2 tbsp
Garlic (chopped) 1 tbsp
Chicken stock 2 cups
Black pepper powder 1/2 tsp
Lemon juice 3 tbsp
Salt 1/2 tsp / to taste
Honey 3 tbsp
Parsley (chopped) 3 tbsp

Ingredients for Sauteed Veggies:
Oil 2 tbsp
Broccoli (blanched) 1/2 cup
Potatoes (blanched) 1/2 cup
French string beans (blanched) 1/2 cup
Carrots (blanched) 1/2 cup
Salt 1/2 tsp / to taste
Black pepper powder 1 tsp
Oregano 1/2 tbsp

Ingredients for Chicken Roulade:
Chicken breast 3-4
Salt a pinch
Black pepper powder a pinch
Water (for boiling) as required
Oil 2 tbsp

Ingredients for Dry Batter:
All-purpose flour 1 cup
Paprika powder 1 tsp
Garlic powder 1 tsp
Red chili flakes 1/2 tbsp
Salt 1/4 tsp / to taste
Red chili powder 1 tbsp

Ingredients for Liquid Batter:
Eggs 4
Milk 1 cup
Chili sauce 1/4 cup
Kashmiri red chili powder 1/2 tbsp
Paprika powder 1 tbsp

Ingredients for Bread crumbs mixture:
Bread crumbs 2 cups
Kashmiri red chili powder 1 tbsp

Ingredients for Fiery Chicken Fries:
Chicken strips as required
Dry batter
Liquid batter
Bread crumbs mixture
Oil (for frying) as required

Directions for Spinach Filling Preparation:
1. In a pot heat water and bring it to boil. Add spinach and boil until fully done. Strain and set aside.
2. In a pan heat oil and add boiled spinach leaves, mushrooms, white pepper, salt, oregano and cook for 2 minutes.
3. Add cream and cook for 1 minute. Your spinach filling is ready set aside.
Directions for Lemon Butter Sauce Preparation:
4. In a pan heat butter and add garlic. Cook for a minute.
5. Add chicken stock, black pepper, salt, lemon juice, honey and simmer for 1-2 minutes.
6. Add parsley and cook for a minute. Your lemon butter sauce is ready.
Directions for Sauteed Veggies Preparation:
7. In a pan heat oil and add broccoli, potatoes, carrot, French string beans, salt, black pepper, oregano and cook for 2-3 minutes over high flame. Your sautéed veggies are ready.
Directions for Chicken Roulade Preparation:
8. Take chicken breast and place cling film on it. Hammer it lightly to flatten it.
9. Now remove the cling film and season it with salt and black pepper.
10. Now add spinach filling on the seasoned chicken breast. Roll the chicken breast in chicken roulade shape.
11. Wrap it in cling film and then foil paper.
12. Now in a pot heat water and bring it a boil. Add wrapped chicken roulades and cover and boil for 25-30 minutes.
13. Take them out and unwrap the chicken roulades.
14. Now heat oil on a pan and place the boiled chicken roulades on it. Cook each side until golden in color. Slice them up and your Chicken Roulades are ready.
Directions for Dry Batter Preparation:
15. In a bowl add flour, paprika powder, red chili flakes, garlic powder, red chili powder and salt. Mix well and your dry batter is ready. Set aside.
Directions for Liquid Batter Preparation:
16. In a bowl add eggs, milk, Kashmiri red chili powder, paprika powder, chili sauce and mix well. your liquid batter is ready. Set aside.
Directions for Bread crumbs mixture preparation:
17. In a blender add bread crumbs and Kashmiri red chili powder. Blend until lightly flaky. Set aside.
Directions for Fiery Chicken Fries Preparation:
18. Take chicken strips and coat them in dry batter, dip in liquid batter and then coat in bread crumbs.
19. Fry them until crispy and fully cooked. Your Fiery Chicken Fries are ready.
20. Serve with Chicken Roulade and enjoy.
