Quenelles are a popular food in France usually made with fish or meat, some also vegetarian. They are bind with egg and formed into quenelle shapes using two soup spoons. These are light and fluffy, easy to make and easy to eat. First poached in water then baked in oven with a tomato sauce (Marinara or Napolitana) and grated cheese.
